Swashbucklers Unite! at Finn and Porter

On September 19, 2015, the Austin Bailliage set sail for evening of adventure at a Swashbuckler Dinner in honor of International “Talk Like a Pirate Day”. The port of call was the Finn & Porter Restaurant in the Hilton Austin. Dressed in period attire, attendees included Captain Jack Sparrow as well as a bevy of other buccaneers. Treasure maps guided everyone through the evening’s culinary conquests created by Executive Chef Peter Maffei and his extraordinary team, beginning with an exotic rum cocktail and a sea bass ceviche with plenty of citrus to help avoid scurvy!

Guests shared a few fish tales during the land and sea course – roasted beef tenderloin with beef cheek and little neck clams atop brown buttered hollandaise. For the wine, Vice Echanson Marshall Jones plundered many a cellar for a treasure chest full of La Sirena Pirate TreasuRed 2012 crafted by renowned vintner, Heidi Barrett.  The culinary adventure was declared a complete success, so instead of being ordered to walk the plank, Chef Maffei and his team were cheered by the motley crew of the Austin Baillage and presented a commemorative Chaine plaque.
